Mike and I would like to say a huge thank you for our amazing wedding food. It really made the day and was exactly what we had hoped for. We had so many great comments from our guests like 'this is the best wedding food I've ever had' and 'I could be vegetarian if all my meals were like this'. The risotto was so much fun and that goats cheese salad was just delicious. I think my favourite had to be the brownie- I stashed some in my bag and ate them for breakfast the next day! Please pass our thanks to the staff too, they were really friendly and professional and created a fun, relaxing atmosphere. It was lovely to see you family there too and glad they could join in with the games and dancing.

"It has been quite difficult to write this testimonial for Dan and his team. In the days and weeks after our dream woodland wedding myself and Rachel sat down to write our thanks several times and genuinely struggled to convey in words the incredible job they did for us. After the 3rd attempt,we asked ourselves, 'Well, what do we want to say? What did we think of the food and the team?' and we must have made a list, in seconds, of about 25 superlatives to describe them. So here goes...

We were so blessed to be put in touch with Dan just over 18 months ago by the lady who owned our Wedding site. We had an idea of what we wanted to do with regards to our food but had no idea if anybody would be willing to do it for us. Nicola said, 'I think you need to meet Dan and Heather'. Rachel and I love food. The food at our wedding was going to be such a focal point and we wanted somebody in charge of it to be as passionate about it as we were. Within about 5 seconds of meeting Dan in a bar in Leeds, coincidentally the bar he started his catering business from, we knew we'd found our caterers. From the start he made us feel comfortable and told us about himself and his journey to sitting before us with a pint. He talked candidly about his love for his family and how his work intersects them.  It was clear to Rachel and I , that Dan was a pretty special guy. We told Dan our ideas for the food at our Woodland setting wedding and he was nearly as giddy as we were. 
'Would it be possible to steal the way Fazenda serve their meat and go with a latin themed meal?' I asked. ' I don't think I know the words to be able to describe the smile on his face. For about an hour we created this incredible menu from scratch with Dan articulately explaining how his team would create this mouth watering meal. After this initial meeting we knew we weren't hiring your usual caterer, we knew that Dan had a vision for his food and , more importantly for us, a vision for how he wanted our day to unfold. 

After a couple of weeks Dan got in touch to talk over a few details about our menu. We again did this in Leeds and got to meet his lovely wife, Heather. The values that they hold as a family are clearly evident in their work, and we were starting to see this first hand. It reaffirmed to us that we really were getting an amazing team to work with. 

Cut forward to the months leading up to our wedding and Dan was on hand at every text, email or call we threw his way. Every bit of correspondence was greeted with such positivity, it was infectious.
Dan invited us over for a tasting menu at his family home and we were able to meet his amazing children. The effort Dan put in to showcase his skills and give us an insight into what we could expect on the day was above and beyond anything we could have asked for. The attention to detail with his food is staggering and the presentation was phenomenal. We talked about how our food would be served and presented at the wedding and again, we spoke openly together about how we could tie in our food to a woodland theme. Heather and Dan were reeling off these incredible ideas using instagram posts they'd made and concepts from previous events they had hosted to help create something bespoke for us. In the past working with some caterers for different events I've often felt that they try to super impose a blueprint they have on to your occasion. This 30 minute conversation sat, with a glass of prosecco on their back lawn, summed up  what Dan and Heather were about perfectly. We hadn't just booked a caterer, we were getting something special.

We met Dan on site in the days leading up the wedding, as mentioned previously, his attention to detail meant that he wanted to run through exactly what we could expect. I whole heartedly believe that if we told Dan that day we'd changed our minds and wanted to start from scratch, he'd have smiled, taken a deep breath and taken it in his stride. Rachel and I were completely at ease. We were looking forward to the food more than we were looking forward to getting married!

On the day itself his team were just incredible. Everything was seem-less. The expressions on our guests faces were a picture when Dan led out his team each holding a skewer of meat. Our traditional-food loving family members were full Latina converts by the end of the meal . The demolished salad and sides bar placed at the centre of our marque was evidence of that! The friendly nature of each staff member and the knowledge they had about their craft was sensational. Each serving was articulately described and it helped make the meal, a real event. When the night guests arrived and were greeted with a demonstration by Dan outside in the woodland using a huge paella dish, they were blown away. Our guests were waxing lyrical about the quality, uniquness and presentation of the food and could not speak highly enough of the entire team. 

When people approached us at our wedding, the first thing anybody wanted to talk about was the incredible caterers and that is exactly what we were hoping for. 

We met Dan in that bar hoping to find a catering team. As I write this 18 months on I can say that on that day we met one of the nicest, most humble, passionate and talented people you'd ever hope to meet, a person that Rachel and I are now fortunate enough to call our friend."
